- Observation (CORRECTED DURING INSPECTION): Observed cardboard and a foam liner being used on top of the stainless steel shelving and under the wire rack on the pizza assembly line. Both of these are surfaces that do not meet the conditions of smooth, durable, easy to clean, impervious to moisture, and nontoxic. These surfaces can pose a potential risk of not being properly cleaned and sanitized, this risks possible cross contamination risk with food items.
- Corrected During Inspection (CDI): These noted items were removed from the areas. This was verified by the EHO as completed. Operator to use a washable liner that meets the conditions as noted above.

- 2) Compressor unit in the walk-in cooler is leaking. Significant amount of water observed collected inside tupperware bins directly underneath the compressor.
- Corrective Action(s): 1) Service or replace this condiments cooler. It must be capable of maintaining an air temperature of 4C or colder. Do not store Ranch and Cheese dips in this cooler. All other dips and sauces may be stored in this cooler as they do not require refrigeration.
- 2) Service the compressor unit so that it is no longer leaking.
