      • Observation:
      • Black, non-food grade plastic, corrugated covers still being used in the premises. These are not food grade or cleanable and they were required to be replaced with a cover proper food grade materials. Owner had stainless steel, flat covers manufactured, but they slide off the pizza pans when tilted and created a safety hazard.
      • Corrective Action(s):
      • Replace all the black, non-food grade plastic, correugated covers with appropriate food grade covers that are durable, sealed, and cleanable.

      • Observation: Pieces of black, corrugated plastic being used to cover pizza dough pans. This plastic is NOT food grade, durable or cleanable. Chemicals from the plastic can leach into the dough and the corrugated openings can NOT be cleaned a sanitized. This could attract pests. This issues has been discussed in the past 1.5 years and no changes have been made.
      • Corrective Action(s): Discard the black, corrugated plastic covers and purchase food grade covers/products (stainless steel or hard plastic) to cover pizza dough pans.
