- 17Mar2026 - At the time of the inspection the dishwasher had just been cleaned and refilled. The dishwasher was run through 5 cycles with the temperatures of the rinse cycle ranging between 63-68°C. The rinse cycle must reach 71°C to adequately sanitize dishes.24Mar2026 - dishwasher is in need of repair and work order has been submitted. Repair anticipated to be completed this week. In the interim, dishes are being manually sanitized following proper procedures at satisfactory concentrations of approved sanitizer.*** Please ensure dishwasher is repaired and the sanitizing rinse cycle can maintain at temperature of at least 71°C. ***

Monitor the temperature of the sanitizing rinse cycle and take needed actions to service/repair the machine to ensure the rinse cycle can maintain at temperature of at least 71°C. ***

- Individual service dishes of desserts were observed within the walk-in cooler and freezer that were not properly covered. This items were in the stage of being prepared and more trays were being added to the rack. The cover was not in place at the time to facilitate adding additional trays. When discussed with the operator, he pulled the covers into place.

- Quats sanitizer was available in buckets throughout the kitchen - 1 of the buckets was tested below the required concentration. The operator immediately replaced the sanitizer in this bucket.
