      • Observation (CORRECTED DURING INSPECTION): Stuffing stored in the oven was measured at 52C since noon. Repeat.
      • Corrective Action(s): Explained to owner again that hot potentially hazardous food must be kept over 60C. Directed owner to cool food down properly and keep cooked and cooled down food in fridge, then retrieve to reheat by order. Demonstrated how to determine food temperature (to keep hot and to cool down) using thermometer onsite. This is a temporary measure as owner informed that he would like to obtain a small hot holding unit for the stuffing. Current hot holding unit has reached capacity.

      • Observation (CORRECTED DURING INSPECTION): A roast beef (~6 inches thick) was stored in a plastic bag and left on the counter. Probed the centre of the meat and determined the temperature to be 50C. Owner said he cooked the roast beef at lunch around 11:30am. He was cooling the meat before placing it into cooler.
      • Corrective Action(s): Do not cool the roast by storing it in the plastic bag and leaving it on the counter. Portion/slice the roast beef so that food is not stored for more than 2 inches high on a tray. Cool food down from 60 to 20C in 2 hours (room temperature) and 20C to 4C in 4 hours (in the refrigerator). Obtain proper trays if you do not have any. Owner portioned the roast beef at time of inspection.
