      • Observation (CORRECTED DURING INSPECTION): A double door cooler in the main kitchen close to the dishwasher machine was operating at 7`C. Potentially hazardous foods had been stored in this cooler for nearly 2 hrs with food temperatures probed at 6`C
      • Corrective Action(s): To prevent the growth of harmful germs and reduce the risk of foodborne illness, the affected foods were immediately relocated to other properly functioning coolers.

      • Increase cleaning of frequency, remove garbage/empty containers more frequently, clean floor drains.

      • 2. Rinse all containers if they will be kept on premises for a long time or remove containers out of kitchen.

      • Do not leave open bags of food laying around when not in use (ex. skim milk powder).

      • Observation: Improved cleaning is required. The floor along baseboards and under shelving requires better, more frequent cleaning as there is an accumulation of dirt and food. Some walk in cooler ceilings have dust on them.
      • Corrective Action(s): Follow a routine, written cleaning schedule. More frequent cleaning of the floors is required. Clean along wall/floor coving.
      • Clean floor in salad /sandwich prep kitchen, including under shelves near 2 door cooler, under counter near hand sink and along back wall. Clean floor under dry storage shelves and under the stainless steel tables next to the recycling area. Clean dust off of walk in coolers 5 & 8. Provide information on follow up.

      • Observation: Commercial dishwasher is working properly to wash and sanitize dishes, however it is leaking water. Maintenance person is on site and is trying to fix the dishwasher. Part is on order.
      • Corrective Action(s): Repair dishwasher so that there are no water leaks. Check that there are no water leaks from automatic detergent dispenser as well. Clipboard is to be impervious to moisture.

      • Observation (CORRECTED DURING INSPECTION): Quats sanitizer dispenser in the main kitchen dishwashing area has air in the chemical feed line and is dispensing 0ppm quats. The sanitizer spray bottle in the sandwich prep kitchen has 0ppm quats. Oceanside servery spray bottle has 0ppm quats.
      • Corrective Action(s): The quats dispenser was run and there is now 200ppm quats being dispensed. Post a sign to instruct staff to check to make sure that quats sanitizer of 200ppm is being dispensed when filling buckets or spray bottles.

      • Observation: There is some spilled food accumulating under the Hobart mixer in the sandwich prep kitchen. The paper towel dispenser at the hand sink in the plating room is starting to rust.
      • Corrective Action(s): Clean floor under the Hobart mixer. Also, the paper towel dispenser at the hand sink in the plating area is to be finished so it is smooth, impervious to moisture, and can be cleaned.
