- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- The master BLT fridge was maintaining a temperature of 5.9 °C, as verified using both infrared and probe thermometers. Cook was advised to relocate all high-risk food items, mainly dairy products, to another properly functioning cooler. This was completed at the time of inspection.The operator was further advised not to store any perishable food items in the unit until it is repaired and able to consistently maintain a temperature of 4 °C or below.

- Four small packs of half-and-half cream were sitting on top of ice cubes in a stainless-steel container. Advised the cook to fully submerge and surround the container with ice to maintain a temperature of 4 °C or below. Issue was corrected during the inspection.
