    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Chlorine sanitizer is used for surfaces; no chlorine test strips available onsite. - Please provide appropriate test strips.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • There are several pieces of old/unused equipment and some personal items that are still in the facility. - Please remove any items not associated with food preparation.

    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • There were some mouse droppings found on floor among shelving across from stairs and behind some fridges/freezers in open storage area. Ensure the droppings are removed, these areas cleaned and sanitized and should place additional pest control devices for mice in these areas.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • Not always documenting final water activity level of foods. Staff on-site at this time did not know if this was being done.Please ensure for the dehydrated products more documentation is done re: their final water activity level.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • There are a couple of ceiling tiles missing in storage area/above shelving. Please replace the missing tiles.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • There is several pieces of old/unused equipment that are still in the facility; please remove.A written cleaning schedule is required. Please do up a written cleaning plan/schedule.

    • 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
      • Some sous-vide cooking being done; no written sous vide plan. Please provide a written sous-vide plan for each item being cooked (e.g. poultry, beef).
    • 09. Are chemicals stored and handled in a safe manner?
      • There were bottles of chemical that were not properly labelled as to their contents. Please ensure all bottles of chemical are properly labelled.
