- 19(1)(a) A food establishment must be located, designed, constructed and maintained to ensure all of the following:
(a) that the risk of contaminating the food is minimized;
- Provide overhead protection that is attached the mobile unit to protect food and food contact surfaces from contamination.
- 19(2)(a) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator:
(a) a supply of potable hot and cold water at adequate pressure and volume with the appropriate facilities to store and distribute the water and to control the water temperature;
- Provide proof that the water source for the mobile unit is potable. Use either from a municipal source, commercially bottled water, or provide bacteriological and chemical water sample results for the well water source.
- 27(d) A food establishment must develop and demonstrate policies and procedures for personnel that ensure that a person entering a food handling area or engaging in an operation in a food establishment who comes into contact with food meets all of the following:
(d) the person washes their hands as often as is necessary to prevent contamination of food;
- Gloves must be discarded and hands must be washed after handling money or when hands become soiled.
- 28(1) An operator must successfully complete a food hygiene training program and provide proof of this to the Administrator upon request.
- Provide verification of completion of a valid, recognized food hygiene course to the Public Health Inspector upon request.
- 30 An operator must ensure that all food in their food establishment is obtained from a source that is subject to inspection or is food that is exempted by these regulations.
- Discontinue cutting toppings (e.g. onions) in home kitchen. Food must be processed in an inspected kitchen that holds a Food Establishment Permit or obtain chopped onions from an approved source.
- 33(1) An operator must ensure that the temperature of food is controlled so that the food does not deteriorate or become inedible or unsafe.
- Obtain for ice for the cold holding well in the mobile unit to maintain food temperatures at 4 degrees Celsius or below.
- 88 A person to whom a permit is issued shall comply with all terms and conditions of the permit.
- Mobile units require a valid vehicle or trailer inspection through the Registry of Motor Vehicles under the Nova Scotia Motor Vehicle Act. Provide valid trailer inspection to the Public Health Inspector.
