      • Observation: Lots of mouse droppings noted at a corner of the room (floor) in the back room.
      • Corrective Action(s): Sweep, clean and sanitize the aforementioned areas.
      • As per Manager, increased pest activities have been recently noted due to the maintenance door being kept opened during maintenance.
      • External pest control company comes in on a biweekly basis (latest visit was noted a few days ago) and Manager has planned to increase service to weekly.
      • Suggested to Manager to keep all opened bags of food in cupboards in pest proof container to remove any food sources available to pest.
      • Sweep, clean and sanitize any time mouse droppings are noted and continue to work with the pest control company.

    • 205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION): Perishable food stored in the upright refrigerator in the back of house and were noted at more than 4C.
      • The following was in this refrigerator and were discarded at the time of inspection:
      • - 4 x 316 g Superloaded sub - temperatures of two of the sandwiches were taken at 15.9C and 14.9C
      • - 3 x 1L chocolate milk - temperature was at 15.7C
      • - 2 opened bags of individual creamer and milk (creamer bag only had 8 containers left and milk bag were quite full, approx. 200 containers) - temperatures were at 14.9C and 16.4C
      • **Issue corrected at the time of inspection** All potentially hazardous food in this malfunctioning refrigerator unit were discarded.
      • Corrective Action(s):

    • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: Back of house upright refrigeration unit was noted at 13.4C at the time of inspection. Temperature of unit was taken last night and as per operator was at less than 4C. However, unit's temperature was not monitored this morning and operator has no idea how long any potentially hazardous food stored in this unit were holding over 4C.
      • Corrective Action(s): Operator must not store any potentially hazardous food in this upright refrigerator until it is able to maintain at 4C or less.
      • Operator must monitor the temperature of this unit and if temperature does not drop to 4C or less by the end of the day, he must call in the unit for servicing.
