    • 205 - Critical Repeat Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation: The prep cooler in the back of the unit had a temperature of 6 degrees Celsius. A large jar of jerk sauce was found at room temperature. The label on the jar stated refrigerate after opening. Improper cold holding above 4 degrees Celsius may result in the growth of microbes that cause foodbourne illness.
      • Corrective Action: Ensure all cooler units can achieve 4 degrees Celsius or below especially when operating the unit. Ensure that all foods that require refrigeration are store appropriately. The operator discarded the sauce during the inspection.
    • 301 - Critical Repeat Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: Paper towel was stored on the food prep surface near the handwash sink and the microwave in use for operation was stored on the floor. Items stored on improperly can become contaminated and then contaminate food.
      • Corrective Action: Ensure that food equipment and supplies are stored in a manner to keep them clean.

    • 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: The dishwashing sink was crowded with dishware, the freezer and refrigeration units were also over crowded with food. (Public Health Significance) accumulated volume of clutter may harbor /allow breeding of pests which may lead to pest infestation, increasing risk of foodborne illnesses.
      • Corrective Action: Reduce overcrowding the food mobile facility. Declutter and clean the facility, maintain the food mobile kitchen in a sanitary condition.

    • 205 - Critical Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation: (CORRECTED DURING INSPECTION) 6 Bags of rotisserie chicken were found in a cardboard box kept at 20°C on the floor of the truck. When questioned operator informed that they are using the chicken rightaway for cooking. Foods stored in the lower shelves of stand up cooler are observed to be at 8°C. The top shelf of the stand up cooler was at 1°C. This could be due to over crowding of the refrigerating not allowing for the air to circulate properly.
      • Corrective Action: The operator is educated on importance of keeping the food away from danger zone. The operator to make sure this never repeats again. Reorganise or remove foods stored from the stand up refrigerator in order for better air circulation and to keep the food at or below 4°C.

    • 309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
      • Observation: Spray bottles containing sanitizing solution were missing appropriate labels. Inaccurately labelled chemical agents can cause accidental misuse, which may result in potential contamination and inadequate sanitation of food contact surfaces.
      • Corrective Action: Ensure all chemicals used in the premises are appropriately labelled to identify the contents.
