    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Butters and whipped butter left in room temperature. Corrected during the inspection. *Please ensure only leave out a small amount of butter/whipped butter, placed an ice under the container while keeping out in room temp. Store it away from heat, sunlight, and the stove. Please keep prepared whipped butter in the fridge and just soften what you need.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Cooler temp. was measured at 10.8 C. Daily temp. records of the facility was checked. No concerns regarding to records. Please monitor temperature of the prep cooler at the cook line.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Cleaning of the following areas are required.* Dust accumulation at the ceiling vents, on wall by the storage shelf in the kitchen, and on the surface of the knife holding board.

    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • *Pest control records were not available onsite. Please make sure keep copy of pest control records onsite for inspection
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • *Caulking at the dishwashing sink area beside the dishwasher was not in good repair, mildew started to grow.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • * Water accumulation at bottom layer of the prep cooler in the cook line area. * Vacuum seal at the bottom of walk-in freezer door was not in good repair. It was falling apart.Please make sure repairs are completed.

    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Some of the food packages in the walk-in cooler were left open or did not have proper coverage on them.
    • 09. Are chemicals stored and handled in a safe manner?
      • One of the sanitizer bottles was closely stored on cutting board by the food storage of the prep cooler. Corrected during the inspection. Spray bottle was removed to another location away from the food prep area to prevent contamination of the food.
