- Observation (CORRECTED DURING INSPECTION): OBSERVATIONS
- 1.) Raw meat stored on top of ready-to-eat (RTE) Food such as pickled carrots and radish.
- 2.) Sauces like fish sauce in containers were stored on the ground.
- Corrective Action(s):
- 1.) Store all raw meats at the bottom shelf of the cooler at all times.
- 2.) Ensure to store all food items including condiments above the ground at least 6 inches (15 cm), which will help you clean surface and monitor pests.

- Frozen pho broth (-1 degrees C) was being thawed at room temperature. Operator stated that they have brought out the broth around 12 noon.
