      • Observation: 1) Prep cooler is at 10 degC. It's also leaking. There's water pooling on the bottom shelf and leaking outside the unit.

      • Corrective Action(s): 1) Get the prep cooler serviced/repaired. Coolers must be able to maintain 4 degC or below. Do not store any PHF's in these coolers until then. Get the leak repaired.
      • 2) Get the upright cooler serviced
      • 3) Get the dishwasher repaired. Operator indicated that the repaireman's coming tonight.

      • Observation (CORRECTED DURING INSPECTION): Ice-machine had build up of mould on the walls of the chamber and the ice trays.
      • Corrective Action(s): Ice was discarded at the time of inspection. The chamber was emptied and the machine was turned off. Do not use the ice-machine until it is thoroughly cleaned and sanitized.
      • Maintain sanitation logs to ensure routine sanitation.

      • Observation (CORRECTED DURING INSPECTION): Bleach sanitizer was too strong in all sanitizer spray bottles. The test strips were being bleached out.
      • Corrective Action(s): Inspector showed the operator the correct mixing ratio for bleach:water. 5ml of bleach (1/4 of the lid of the bleach bottle) per 1L of water is to be mixed to obtain 200 ppm chlorine residual. All food contact counters are to be wiped down with water and re-sanitized.

      • Observation (CORRECTED DURING INSPECTION): 1) Several containers are left uncovered in all coolers.
      • 2) Dirty rags are kept on counters. Staff was noted to use these rags to wipe down counters (no sanitizer).
      • 3) A piece of dirty cardboard was kept on the middle food preparation counter.
      • Corrective Action(s): 1) Ensure all containers have tight fitting lids in storage.
      • 2) Rags were removed from counters at the time of inspection. Ensure wiping cloths are kept in sanitizer solution to prevent the growth of pathogens.
      • 3) Cardboard was discarded at the time of inspection. Cardboard is not a food safe material. It cannot be cleaned and sanitized. All surfaces must be smooth, impervious to moisture, and easy to clean.

      • Observation: Operator claims to have completed their Food Safe training last year (also previously noted in the inspection reports) but has no proof of completing the course as no certificate was received in the mail.
      • Corrective Action(s): Keep a copy of your Food Safe level 1 certificate on site for review. Contact the agency that you completed your course with and follow-up regarding your certificate. Date to be corrected by: March 31, 2023.

      • Corrective Action(s): Ensure all containers have tight fitting lids to prevent spillage and cross contamination.
      • Food in freezers must be stored safely to prevent cross contamination. Separate raw meats from other frozen ingredients.
      • Deep clean the facility and regularly clean and sanitize high touch surfaces such as cooler handles.

      • Observation: 1) The back storage area has accumulated a large amount of items being stored on the ground, shelves, and all throughout, to the point where you can not enter this area to clean it properly.
      • 2) The vent hood service date is past due (June 1, 2021).
      • Corrective Action(s): 1) Items not necessary for day to day function of the restaurant need to be removed, and those that are needed must be stored on shelves atleast 6 inches off the ground so that this area can still be accessible and cleaned as needed to avoid build up of dust and filth.
      • 2) Schedule an appointment with a vent hood cleaning company to service the vent hood.
      • CORRECTION DATE: 2 weeks.

      • Observation: The booster on the high temperature dishwasher is not working properly. The final rinse temperature ranged from 67 to 69 C. However, the dishwasher has been connected to a chlorine solution and this is achieving 50 ppm chlorine at the plate level. This is a temporary solution.
      • Corrective Action(s): Ensure that the booster is fixed within one month.
