      • Mechanical dishwasher was not dispensing chlorine at acceptable concentration of 100 ppm.Discussed the concerns with staff onsite.Violation was corrected during the inspection by troubleshooting the machine.

      • Handwashing sink was inaccessible at the start of inspection.Violation was corrected during the inspection.Make sure that handwashing sinks are always available and accessible.

      • There was accumulation of food spillage inside the walk-in coolers, freezers, underneath the cook-line and behind the shelves.Deep clean and sanitize all the hard-to-reach surfaces by taking out equipment and food containers.

      • Containers and scoops without handles were observed in dry ingredient bins.- Please ensure all scoops that are stored in food products have handles that can be kept out of the product to prevent any potential contamination.

      • 0ppm of chlorine was observed in the mechanical dishwasher. Operator indicated they will call ecolab and get it fixed. Please ensure to routinely monitor the concentration of the chlorine and should be at 100ppm. Facility will be using the dishwasher to wash/rinse the soiled dishes and will be manually sanitizing the dishes in the sink for at-least two minutes, followed by air dry.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Observed dust, food debris, and grease build up in hard-to-reach areas (i.e., in-between and behind appliances, ceilings at the prep station, storage area). Please ensure to clean and sanitize to prevent further accumulation.
