      • Observation (CORRECTED DURING INSPECTION): (1) Large pieces of pork observed cooling at room temperature. Probed at an internal temperature of 61C.
      • (2) Bowl of cooked pork chops on the counter probed at 31C. Pork started cooling over 2 hours ago.
      • Corrective Action(s): (1) Staff instructed to cut up pork into smaller pieces and transfer onto a tray for faster cooling during the inspection.
      • (2) Staff discarded pork chops during the inspection.
      • **Hot food must be cooled from 60C-20C in 2 hours or less, and then from 20C-4C in 4 hours or less to prevent pathogen growth**

      • Observation: (1) Front of house bleach sanitizer spray bottle and back of house bleach sanitizer bucket measured >200ppm. Test strips were bleached out.
      • (2) Foods stored in cracked/chipped plastic container in walk in freezer.
      • (3) Foods (eg. spring rolls, tripe, raw meat) observed uncovered in reach in cooler, walk in cooler/freezer.
      • (4) Raw eggs stored above ready to eat/cooked foods in the walk in cooler.
      • Corrective Action(s): (1) New bleach solution prepared. Tested at 200ppm. Mix 5ml bleach to 1L water.
      • (2) Discard containers. Cracked/chipped containers can physically contaminate food.
      • (3) Cover foods not actively in use to protect from contamination.
      • (4) Store raw eggs/meats below ready to eat/cooked foods to prevent cross-contamination.

      • Observation (CORRECTED DURING INSPECTION): Frozen meats (beef flank, chicken, etc.) thawing at room temperature.
      • Corrective Action(s): Frozen meets were moved to the cooler during the inspection. Do not thaw foods at room temperature - thaw in cooler or under cold running water.

      • Observation: 1. Facility was using a disinfectant (Sanitol) that requires a rinse step after use on dining tables and chairs. Any disinfectant requiring a rinse step are not food grade.
      • 2. A couple of containers of spring rolls were stored with no cover/ plastic wrap in the walk-in freezer. Note: This is a repeated violation.
      • 3. Large amount of ice buildup noted below the fan unit in the walk-in freezer.
      • Corrective Action(s): 1. Operator may still use the Sanitol on chairs and common touch surfaces such as handles and sink, however they must discontinue using it as a disinfectant for tables. If food is dropped on the table and a customer decides to eat the food, any chemical residual from the disinfectant may be transferred to the food and become a chemical hazard to the consumer.
      • Operator must prepare a food-grade sanitizer (such as the low-level bleach sanitizer, similar to the one prepared for the back of house) to use on tables. This sanitizer spray bottle MUST be made available at all time for the front of house.

      • Corrective Action(s): Any food stored in the freezer and cooler units for a prolong time period or overnight must be stored protected with a plastic wrap, aluminum foil or cover/ lid to protect it from potential overhead contamination.
      • Have lids available for the dry herbs/ condiments to protect pests or unwanted materials from contaminating the food.

      • 2. In general, improvement noted where proper dispensers (with handles) are used for dispensing spices and condiments. However, still noted bowls, with no handles, being used for dispensing bulk food.
      • Corrective Action(s): 1. Ensure all food, especially in the dry storage area, are stored protected with a lid or plastic wrap to avoid pest from contaminating the products.
      • 2. Replace all improper dispensers (e.g. bowls) with appropriate ones with handles to avoid indirect hand and food contact.

      • Observation (CORRECTED DURING INSPECTION): No sanitizer solution set-up at the time of inspection.

      • Food handler created a bleach sanitizer solution. 200 ppm chlorine residual was detected from the solution.
      • There must ALWAYS be a sanitizer solution set-up whenever food preparation occurs to allow food handlers to sanitizer their work surfaces/ equipment during the preparation process.

      • Observation (CORRECTED DURING INSPECTION): Missing paper towel by the front of house handwashing station at the start of the inspection.

      • Manager placed a roll of paper towel by the front of house handwash station. All handwash stations MUST be accessible, equipped with hot and cold running water, liquid soap and paper towel at all time to allow food handlers to wash their hands when required.
      • As per Manager, a new paper towel dispenser was installed but has issue and was unable to load paper towel in the dispenser at this time.

      • Observation: 1. Food in the walk-in-freezer (a container of broth and a bowl of cooked meat) stored unprotected.
      • 2. Containers of condiments (star anise, sugar, coriander, etc.) stored unprotected in the dry storage area.
      • 3. Food (box of carrots and coconut water) stored directly on the floor in the walk-in cooler.
      • Corrective Action(s): 1 and 2. All food, especially food with the intention of being stored for a prolong time period/ overnight, must be stored protected with a lid or plastic wrap to avoid potential contamination. This is important when there is a known fly issue in the facility. All food must be stored protected to avoid contamination by pests.
      • 3. All food in the walk-in cooler must be stored at least 6 inches off the floor. This helps facilitate cleaning on the floor of the walk-in cooler.

      • Corrective Action(s): Abell, an external pest control company, comes in every few months for inspection. Work with your pest control company to help deter and eliminate fly issue noted in facility. May consider increasing inspection frequency if more flies noted.

      • Corrective Action(s): 1. Clean the fume hood and maintain in a sanitary condition.
      • 2. Sweep, clean and sanitize all mouse droppings ntoed on the premises. This will help determine if mouse droppings are fresh or from a previous issue. Pest are also attracted to their own waste materials and will return if their droppings are not cleaned and sanitized to remove the odor from that location.

      • Corrective Action(s): 1. Remove all the bowls from the bulk food containers and replace with proper dispeners with a handle. Dispensers are to be stored within the food containers with the handles extending out and not in contact with the food. This prevents potential contamination of the food from the hand to the handle/ bowl.
      • 2. Discard the box and use an appropraite container or shelvings to hold cleaned dishwares to avoid potential contamination after washing. Box is not an acceptable material to be used in the facility.
