- Observation: Cardboard on shelves or on floor to absorb oils observed very old and deteriorated. Area below and around the cookline dirty and oily.
- Area below double sink slightly dirty with food debris.
- Corrective Action(s): Make sure to change the cardboard daily or don't use at all. Cardboard does not replace cleaning.
- Clean up area below double sink and keep it dry. This should help control the fruit fly population.

- Observation: Bags of raw chicken in prep sink thawing in water. Sink plugged. Water at room temperature, meat similar temperature. Staff indicated chicken placed there in morning. Staff immediately put in cooler.
- Corrective Action(s): Do not thaw meat in standing water for undetermined amount of time. Water should be changed every 15 minutes with fresh cold water and meat should not completely thaw. Place in cooler in reasonable amount of time.

- Observation: Fruit flies noted at double sink in kitchen. Observed mop and bucket in this space, and ponding water on floor (minor). Flies may be moving to other areas of premises too.
- Corrective Action(s): Remove mop and bucket from this space. Store in washroom with mop sink facilities.
- Make sure this area and dishwasher area is kept dry and clean.
- Make sure staff clean sinks daily as required in sanitation plan.
- Make sure all drains have hot water and chemical (ex. Mr. Clean) to deter breeding in these areas. Do it daily until fly population under control. They have a very quick breeding cycle.

- - Meat slicer area, middle chelves and work counters: Equipment on floor, shelves dirty, plug outlets dirty.
- - Storage area by back door: Behind freezer units, and inside upright freezer.
- - Under dishwasher.
- Corrective Action(s): Kitchen needs a good and thorough clean up.
