    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • The concession is using a Quats based sanitizer and the Milk Room booth is using chlorine bleach sanitizer - you do not have test strips for either to check on the concentrations.So you can either:a) get test strips for both the Quats and chlorine based sanitizers, ORb) decide on using only one sanitizer for both areas and get the appropriate test strips for the product chosen.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Operator uses non-chlorine bleach as a sanitizer. Product did not pass test strip. Informed operator to used approved sanitizers such as chlorine solution at 100 ppm, quaternary ammonium solution at 200 ppm, or iodine solution at 12.5 ppm.A copy of a "how to mix approved sanitizing solution" will be sent to the operator.Sanitizing reduces the number of microorganisms on surfaces to levels considered safe.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • Observed an expired food permit post on the wall. Operator printed out the new permit and replace the old one in my presence. Food permit must be valid and posted in a conspicuous manner.
