    • 204 - Critical Food not cooked or reheated in a manner that makes it safe to eat [s. 14(1)]
      • Observation: (CORRECTED DURING INSPECTION) Sausage weiners are not being adequately cooked before placing them into a hot holding unit (Public Health significance) - Foods must be cooked to a minimum internal temperature of 74°C before storing them for hot holding to ensure the food is safe to consume.. Hot holding units are not meant to complete the cooking step.
      • Corrective Action: The sausages were discarded at the time of inspection and the operator to complete a cooking step before moving them to a hot holding unit. Internal temperature of all cooked foods must reach 74°C for 15 seconds and then only placed in a hot holding unit which maintains over 60°C.
    • 205 - Critical Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation: Refrigeration Temperatures for the over the counter unit in the kitchen area were slightly elevated (greater than 4°C) (Public Health Significance) Refrigeration temperatures for perishable foods must be less than 4°C to prevent the growth of disease causing bacteria and toxin production.
      • Corrective Action: Move potentially hazardous foods to working refrigeration units immediatelyand have the unit serviced. Monitor and log temperatures regularly, adjust and have repaired as necessary to provide a temperature of 4° at all times.
    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: (CORRECTED DURING INSPECTION) Inadequate sanitizing rinse solution. Sanitizer concentration for bleach sanitizer was detected to be over 100 ppm. (Public Health significance) - Bleach sanitizer concentrations over 100 ppm can lead to chemical contamination of food and can also leave sticky residue on surfaces.
      • Corrective Action: Operator was told to immediately dilute the sanitizer solution and adjust the concentration to be at 100 ppm. Operator to acquire sanitizer test strips to verify sanitizer concentrations.
