      • A splash guard is needed for the two hand washing sinks at the bar due to the proximity to the ice wells. Please install splash guards at these hand sinks to protect from contamination.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • The facility will be preparing sushi rice but did not have pH test strips or a pH meter on-site. Please obtain pH test strips or a pH meter to be able to test and verify the pH of the sushi rice (must be a pH of 4.6 or lower to be shelf stable).
