      • Observation: Upright freezer's at -5 degC. Some of the breads in the freezer are not frozen. There's a warning sign inside on the panel that's flashing "vacuum condenser". Get this looked into. Monitor the temperature of the freezer to see if it goes down.
      • Corrective Action(s): Move any PHF's into the chest freezer and don't store these foods in this freezer. Store only breads, frozen fruit, etc in this freezer until it can maintain a temperature of -18 degC or below.

      • Observation: The sanitizer pail is almost empty. As per manager, new sanitizer will be delivered around 4:30pm today.
      • Corrective Action(s): As discussed, until the sanitizer pail is replaced and the dishwasher is dispensing at least 50ppm Chlorine, you MUST use disposable plates for serving OR wash the dishes in the dishwasher then sanitize them in the 2-compartment sink (add 1 oz bleach per gallon of water) for at least 2 minutes before airdrying. Once the sanitizer pail has been replaced, use your test strips at least once a day to ensure that the dishwasher is dispensing sanitizer regularly.
