    • 19(1)(c) A food establishment must be located, designed, constructed and maintained to ensure all of the following:  (c) that the surfaces and materials are durable, non-toxic and are easy to maintain, clean and sanitize;
      • The cabinet under the handwashing sink in front area observed rotten and moldy due to water damage. Excessive dirt buildup was also observed in this cabinet. Clean and repair or replace the cabinet under handwashing sink in front area.
    • 19(2)(b) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator: (b) adequately designed and appropriately located hand-washing facilities;
      • Paper towel dispensers at all handwashing sinks in the kitchen were out of paper towel. Employees mentioned they are out of the right size paper towels for dispensers and order should come in next morning. Individual paper towel rolls available for drying hands. All handwashing sinks must be equipped with single use paper towels in dispensers.
    • 23(1)(b) All equipment and utensils used to process, prepare, store, serve, sell or display food must be designed, constructed, installed and maintained to (b) allow adequate cleaning, sanitizing and maintenance.
      • Multiple cutting boards observed with excessive cuts and scratches. Surfaces such as cutting boards that are subject to scratching and scoring must be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced. Replace or re-surface cutting boards with scratching and scoring.
