      • Observation (CORRECTED DURING INSPECTION): Rice in the rice cooker measured at 23C. Staff stated that they were taken out around 9am (1.5 hours prior to inspection) from the walk-in cooler to reheat in the rice cooker.
      • Corrective Action(s): Staff was instructed to reheat the rice in the microwave to ensure it reaches 74C or above. Rice cooker's warm function cannot reheat the rice properly.

      • Observation (CORRECTED DURING INSPECTION): Toppings in inserts stored at the top section of the prep cooler (cheese, chopped vegetables, sauces) measured at 6-10C. The toppings are overfilled and the top layer is around 10C. Staff stated that the toppings were topped up around 10am (30 minutes prior to inspection), and they are stored in the inserts throughout the day.
      • Corrective Action(s): Staff was instructed to reduce the amount of food stored in the inserts and stored the rest in the bottom section of the cooler. Only top up when the inserts are nearly empty. This will ensure the food items can reach 4C or below. Note: This is a recurring issue and failure to comply may result in correction orders and/or tickets.

    • 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation: 1. A metal sheet is drilled in the the ceiling of the walk-in cooler underneath the air vent. The sheet/pan has a tube connected to a drain bucket, the bucket is dry.
      • 2. Cardboard is used to cover the floor inside the walk-in cooler.
      • 3. Cutting boards for protein and bread have black mould growth that are no longer cleanable. Staff stated they are not using them anymore.
      • Corrective Action(s): If there is a leak in the walk-in cooler, please fix the leak by contacting a technician. Otherwise, remove the metal sheet and it can interfere with cold air circulation from the air vent. 2. Cardboard is not easily-cleanable and can accumulate dust and food debris. Remove the cardboard and clean the floors regularly. 3. Replace protein and bread cutting boards. Date to be corrected by: 1 week.

      • Observation: Rodent droppings seen everywhere throughout premises (especially underneath AC Unit, along the grill wall beside garbage bin and toppings cooler, shelving opposite of the grill cooler, cabinet underneath cash register).
      • Corrective Action(s): Deep clean entire premises. Sanitize all surfaces prior to use. Place all food in pest proof containers. Remove all cardboard that is being used to line shelves (prep table where microwave is stored). Increase visits from pest control company.
      • Premises must be free of all pests. Correct immediately.

      • Ensure all holes are sealed. Inspect premises for any other holes/gaps. Correct immediately.

      • Observation (CORRECTED DURING INSPECTION): Feta cheese, cheddar cheese, sprouts, guacamole stored in the top insert section of the topping cooler registered an internal temperature of 9-12 C. The left and right side of the top section of this cooler is unable to maintain a temperature of 4 C or below.
      • Corrective Action(s): Discard sprouts as they have been in this unit for more than 2 hours. Relocate cheeses and guacamole to the bottom section of the cooler. Do not use the sides of the top section of the cooler until it is repaired/changed - it must be able to maintain a temperature of 4 C or below.
      • Note: this has been a re-occuring issue. Failure to comply may lead to enforcement action such as correction orders and tickets.

      • Corrective Action(s): Premises must be inspected for rodent droppings daily. Remove rodent droppings and sanitize these areas with an approved sanitizer.
      • All surfaces must be sanitized prior to use. Note: 'pinesole' is a cleaner, not a sanitizer.
      • Discard all items on the shelves with rodent droppings if these items cannot be sanitized.
      • Premises must be free of pests. Seal all entry points.
