- Observation (CORRECTED DURING INSPECTION): In service line cooler, the cheese tub and insert is too big for the unit and prevents the unit from closing. The large cheese insert was detected at 8C to 14C for less than 2 hours. The requirement is 4C and below and the cooler must be able to close the cover.
