    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): Sanitizer in spray bottle (only one available) measured less than 150 ppm quats solution. This is the second consecutive inspection noting this issue. Several cloths used to wipe down surfaces observed, and observed dry and dirty. Likely not used with sanitizer. Checked main auto feed solution and measured 200 ppm.
      • Corrective Action(s): Spray bottle sanitizer use is not adequate, especially with the expanded food service and number of cloths in use at multiple food handling stations.
      • **Switched to sani-buckets (x2) labelled for use with sanitizer. These buckets must be changed out avery couple of hours with fresh solution to ensure it maintains 200 ppm at all times. This should provide easier and better systems to keep hard surfaces throughout the facility clean and sanitary.
      • Check at follow up inspection date for continued use.

    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Observed a number of work stations in a state of disorganization and in poor sanitary condition. It is clear, systematic daily cleaning is inconsistent and/or or inadequate. This includes:
      • - dishwash area, prep sink area, pizza dough area, secondary shelves in all food prep areas, and some of the primary counters and equipment.
      • - walk-in cooler floor also needs more thorough cleaning.
      • Corrective Action(s): Provide a proper cleaning reset of all stations. Remove clutter from work spaces.
      • Follow up inspection needed for this space. See report for date of follow up.

      • 311 - Premises not maintained as per approved plans [s. 6(1)(b)]
      • Observation: A) Cloths for cleaning piled up in large volumes at dishpit. AProns and other work clothing piled up on floor of washroom. Washroom stinks and likely the clothes are contributing.
      • B) Storage space is limited in premises to accomodate added food services, or the added food services is impacting the organization or this facility.
      • Corrective Action(s): Obtain proper storage containers for linens and ensure they do not contribute to the unsanitary condition in premises. Make sure linens are removed from facility more often for cleaning. Discuss at follow up inspection date.
      • Premises has inadequate storage space for addtional food activities noted. Invest in additional storage and/or remove items not needed to free up space.
      • Review at follow up inspection date noted.

      • Observation: Some counters and secondary surfaces observed with excessive food debris and/or dust build up.
      • Some walls adjacent to food prep areas and counters observed with food splatters in excess of one or two days.
      • Floor around and behind the tandoor, deep friers and cookline observed with excessive build up of food debris and grease.
      • Floor drain at walk-in cooler excessively dirty.
      • Corrective Action(s): Clean identified areas noted above. Increase frequency and/or quality of cleaning of all primary and secondary fooc contact surfaces as discussed. Review for improvement at next scheduled inspection.

      • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: Mop sink sanitizer dispenser feed is not functional. Possibly blocked. Tested and measured at 0 ppm. This dispenser is used for spray bottles.
      • Corrective Action(s): Fix this dispensing unit or remove from operation so staff do not use. This must be clearly identified or removed. Send picture indicating completed work. Send within 10 days.

      • Observation: Area of floor behind dough-making observed with accumulation of flour. Discussed with operator. Bigger flour bins to come.
      • Ceiling at air exchange observed with accumulations of dust and webbing.
      • Corrective Action(s): Clean these areas. Increase cleaning cycle for flour station to ensure food related debris on floor minimized.
      • **Periodic cleaning of the floor drain at the walk-in cooler recommended.

      • Observation: Main quats auto dispenser not working. No Quats concentration measured at output. Tested and re-tested.
      • Corrective Action(s): Immediately move to manual method of sanitizer addition. Fill third compartment in sink to typical level and add at least 1/2 cup of concentrate to achieve 200 ppm solution. Fill spray bottles from fresh solution made at beginning of each day until dipsensing unit fixed. repeat filling sink and manual method for making sanitizing solution in sink until unit fixed. Follow up inspection needed.
      • Violation Score: 15
    • 312 - Items not required for food premises operation being stored on the premises [s. 18]
      • Observation: Unnecessary accumulation of containers, buckets and other utensils in excess of that needed to operate noted around the dishwash area and support shelves. This is impacting the ability to properly wash and sanitize equipment, and potentially can re-contaminate cleaned dishes etc.
      • Corrective Action(s): Remove excess equipment and containers such that the dishwash area can be used effectively and safely. This will be reviewed at follow up inspection date.
