Sanitizer solutions that are too strong may leave chemical residues on utensils and food contact surfaces, posing a potential health risk if ingested.
      • Corrective Action: Operator was informed to contact the manufacturer to arrange for adjustment of the sanitizer dilution to achieve the recommended concentration

      • Observation: (CORRECTED DURING INSPECTION) Sanitizer solution was not readily available during the inspection. Public health significance: Regularly preparing and using a sanitizer solution for sanitizing food contact surfaces, equipment, and high-touch areas helps maintain microbial growth levels within safe limits, thereby preventing cross-contamination and foodborne illnesses.
      • Corrective Action: Operator prepared the sanitizer solution (QUATs) and placed wiping cloths inside the sanitizer buckets. The concentration of the sanitizer solution was measured with a test strip and found to be between 200-400 ppm. Operator was instructed to prepare and use the sanitizer solution at all times.
