- Observation (CORRECTED DURING INSPECTION): Dish washer final rinse at the plate observed at 66.5 C using min/max temperature probe. Dish washer digital display indicated final rinse at 80 C.
- Corrective Action(s): A final rinse at least 71 C at the plate is in the final sanitizing cycle and working temperature indicator is required for the dishwasher. Correction needed by January 10, 2019. In the mean time, dishes are to be sanitized in three compartment sink.
