Additionally, some areas of the floor require cleaning.

      • The dishwasher tested at 0 ppm chlorine sanitizer. Staff were instructed not to use the dishwasher until it has been thoroughly cleaned and the sanitizer concentration measures within the required range. In the interim, the 2-compartment sink method shall be used. A QUATs dispenser is installed at this sink for sanitizing.

      • The dishwasher has a significant accumulation of grime on both the interior and exterior surfaces and must be thoroughly cleaned and sanitized prior to use.

      • The hand wash station, beside the deep fryer. did not have any paper towels in the dispenser. This was corrected during inspection.

      • Green carts have build up of grease and food debris. These are on a cleaning schedule, but may require additional cleaning. Please thoroughly clean these carts.

      • There was buildup of mold/grime on the cooler shelves in the walk-in cooler. The floor in the walk in cooler had spills. There was buildup of grime in the floor corners and hard to reach areas. The dry storage shelves had build up of grime.Staff was not aware of any cleaning schedules or checklists.

      • Small leak noted under dishwasher. Discussed having leak investigated and repaired. Please ensure to mop up excess water.

      • Green carts have build up of grease and food debris. These are on a cleaning schedule, but may require additional cleaning. Please thoroughly clean these carts.

      • The ceiling is leaking across from the pizza oven. Employee put a bucket down to catch water and stated that the building maintenance and landlord were aware and working on this. This needs to be repaired quickly. July 8th: The ceiling is leaking in two places now, not above food handling areas. Building maintenance is coming to repair Wednesday, July 10. July 15: The ceiling was not actively leaking during the inspection; however, you could see visible water accumulation in the two light panels. Pizza hut is responsible for interior of building (i.e. cleaning/drying/repairing light panels). Building management confirmed that the permanent roof repaired was completed on July 11th.

      • The paper towel dispenser in the kitchen was empty and restocked during the inspection. Ensure all hand sinks are fully stocked.

      • The soap dispenser at one hand sink in the kitchen was broken. There is an alternate soap dispenser nearby. Repair this dispenser.

July 8th: The exhaust grate filters above the pizza oven had been cleaned, but deep cleaning on the cooler door, corners, and crevices is still needed.

      • The sanitizer was empty in the dishwasher at the time of inspection. Operator refilled and chlorine measured 100 ppm. Ensure you are checking the sanitizer concentration at more frequent intervals.

This has been reoccurring during each routine inspection since ownership change.
