      • The donair cone was at room temperature, the vertical broiler was not turned on. Ensure the broiler is on when the cone is on it. The shaved donair should undergo a secondary cook step prior to serving.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The veggie cooler was measured at 11C, thermometer in the cooler is in disrepair. Ensure the coler is not used for high risk food unless it can maintain temperature below 4C. Replace the thermometer.

The operator indicated that the broiler was being shut on and off occasionally.- Keep the vertical broiler on at all times when there is a meat cone on it.-A food handler must not turn off the vertical broiler to slow down the cooking of the cone.
