    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • A food-grade sanitizer was not available for use at the time of inspection. Have access to a food-grade sanitizer with a verified concentration prior to food handling.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Several utensils and customer single-use containers were being stored directly on the floor, or in containers not suitable to protect from contamination. Ensure any utensils are stored up off the floor in non-absorbent containers.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1) A thermometer was not available onsite to measure the temperature of food being hot held. Ensure an accurate thermometer (a probe and/or infrared type) is available whenever potentially hazardous foods are being stored to verify hot/cold holding. 2) The hot-holding units used to store lasagna were recorded at a temperature of 52C. Staff indicated that food would be rotated every two hours with new product. Use additional candles or a different style of hot-holding unit for future special events.
    • 22. Is the temporary food establishment properly constructed, configured and maintained?
      • The special event vendor was not fully set up at least one hour prior to the event's start time.
