- 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
- 1. One cutting board grooved/discoloured. Ensure cutting boards are in good condition and replaced when necessary. Ensure they are cleaned, rinsed and sanitized at least every 4 hours if used continuously.2. One dry storage bin has lid which has been taped. Replace damaged lid.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Cooked vegetables for daily special, hummus, and cheese out at room temperature. Time label and discard at set intervals (max 4 hours) OR maintain below 4C (recommend 3 time periods per day).**Proper cooling methods are not possible at this location: ensure chili and any daily specials are prepared, kept hot (held at 60C after cooking to 74C), and used the same day.
- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- Water at hand sink not at a comfortable temperature for handwashing. Ensure warm water is provided for handwashing.
- 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
- Some evidence of rodents (droppings) were noted below cupboards on the floor in the preparation area. Evidence appeared old. Thoroughly remove any debris/droppings (using wet cleaning method) and monitor for any activity. Good improvement in sealed shed in terms of pest activity.
