- The sanitizer concentration was initially measured and found to be below 200 ppm. However, before the end of the inspection, the chemical representative arrived on site and corrected the issue. It was demonstrated that taking a sanitizer reading with test strips immediately after the bottle is filled—while the sanitizer is still agitated and contains bubbles—can result in an inaccurate reading. Staff were advised to allow the sanitizer bottle to settle for a few minutes and for bubbles to dissipate before testing the concentration with test strips.

- One of the spatulas was discarded as it was worn. Staff were reminded that spatulas can become frayed when the metal edge of a can rubs against the rubber.I also observed a cracked lid, which was discarded at the time of inspection.Please ensure that all equipment is kept in good working order. If any item is observed to be damaged, it should be removed from use immediately.

- Sanitizer spray bottle was at an inadequate strength at the time of inspection (clear color). Please ensure staff verify the concentration of the sanitizer each time the sanitizer spray bottle is filled up to ensure it is the correct strength. The dispenser on the 1st floor cottages seems to be working properly and may be used until the other dispensers are working as intended.

- The dishwasher was observed to be leaking and the tap next to the dishwasher. Please let me know when these have been repaired.

- Sanitizer strength was too weak. Test strips need to be used to verify the concentration of the sanitizer once a bottle has been filled.

- A 10 kg container of margarine which states, "Keep Refrigerated" was observed with a spatula in it at room temperature. As discussed, transfer a small amount of the product to a container to use within 2 hours.

- Dishwasher was verified to be working satisfactory however, there was some dishes observed put away unclean (baked on residue). Dishes need to be rinsed and visually inspected after the dishwasher and before putting them away to ensure they are clean.

- The stand-up freezer is dripping water onto food containers. As discussed, I suggest running a hose into a bucket, so the water doesn't go everywhere.One of the containers for the food processor was observed to be damaged. Discard.
