      • There are many flies in the kitchen; additional measures need to be taken to control and eliminate flies.

Once dried out, needs to be properly finished.The floor is also "spongy" under some of the floor tiles where going from banquet prep area to hallway. Ensure water-damaged material removed, area dried out and floor repaired.Some of the shelving under the coffee maker is damaged, wet and growing mold. Ceiling tiles and insulation were removed for area to dry out but please ensure if any mold develops, that mold is removed and there are still some severely water-damaged ceiling tiles in this area that need to be removed.Ensure once repairs complete that ceiling tiles are replaced.

Replace missing baseboard; repair wall.There is paint chipping off the ceiling to the right of the dishwasher and the ceiling is damaged by vent in area near the US Range oven. To be repaired.There is missing baseboard along bar wall (under sinks, etc.) and the floor is uneven (missing tiles at back) allowing debris and liquids to accumulate in this area. Repair floor and install baseboard.The shelving for the banquet coffee station is very damaged. Replace shelving.Floor also needs repairs in banquet coffee station area.Shelving on which liquor bottles (storage room) are sitting are unsealed wood; to be sealed/painted so are impervious to moisture and easily cleanable.The front of the sauce cooler is covered with duct-tape.       • Was advised one side of the two compartment sink in the kitchen is being used for handwashing and the other side for washing vegetables and cooling foods. There was no paper towel at this sink (corrected during inspection) but needs to be in a dispenser. Also need to install barrier between the two sides of the sink to prevent splashing onto foods on other side while handwashing. Alternatively can equip the on-line handsink with soap and paper towel in dispensers and install barrier on the right side to prevent splashing on foods kept in the large ice-well.Could also ensure the other two-compartment sink in the back area by the walk-in-cooler is functional (currently water was shut off to it) and use that sink for cooling and washing foods instead of the one by the cooking line.There was no soap or paper towel at the banquet coffee station. Soap and paper towel in dispensers to be provided at this sink. Ensure all sinks used for handwashing are equipped with soap and paper towel in dispensers and if any open food within 18 inches, that a barrier is installed to prevent food contamination.

Area and utensils need to be cleaned at the end of the night.
