    • 211 - Frozen potentially hazardous food stored/displayed above -18 °C. [s. 14(3)]
      • Observation: The temperature of food in the kitchen freezer measured between -7 and -11°C.
      • Corrective Action: Reduce the temperature in the freezer to -18°C or less.
    • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: The dishwashing machine is not operating.
      • Corrective Action: Wash and sanitize dishware and utensils in the 2-compartment sink using the 3-step method (wash-rinse-sanitize). The sanitizing solution (bleach and warm water) must contain at least 200 ppm Chlorine.
