- Observation: The dishwashing machine is not operating.
- Corrective Action: Wash and sanitize dishware and utensils in the 2-compartment sink using the 3-step method (wash-rinse-sanitize). The sanitizing solution (bleach and warm water) must contain at least 200 ppm Chlorine.
