      • The facility is selling home-prepared mustad in the retail space. All foods sold in a food establishment holding a food handling permit must be obtained from an inspected source.
    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • Ice scoop is placed in the ice with the handle touching the ice. Keep ice scoop stored outside of the ice in a sanitary storage location.

    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • One staff reported their three step process as washing, rinsing in sanitizer and rinsing dishes in hot water. The correct three-step process was reviewed to wash, rinse, and sanitize in a non-rinse concentration of bleach for 2 minutes.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Chlorine test strips are not available to check sanitizer concentration. Obtain chlorine test strips.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Pest control records are not kept. Ensure a pest control monitoring program is in place and keep records of all signs of pests or activity and corrective actions.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • The food handling permit receipt is posted inside the kitchen. The permit is not posted. Post the food handling permit in public view.
