      • Observation:
      • - Few insects were observed on the floor underneath the plastic pallets holding bags of flours. They appeared like flour beetles.
      • Corrective Action(s):
      • - Ensure deep cleaning is done in this area. Install some insect monitoring traps in this area and check the bags to see any signs of infestation. Any infested batch should be discarded.

      • - Manager to double check the last service date for ventilation unit. Ensure dust build up is removed.
      • - Organize bakery equipment and supplies left on the hallway. Ensure to have the baking trays covered.

      • - Cream cheese filled baked goods are deemed potentially hazardous food item until laboratory test document is provided to ensure their pH or water activity is within the required range for shelf stable product. Transfer these items to cooler for storage and request documentation from supplier.

      • Corrective Action(s):
      • - Clean the undercounter cooler.
      • - Organize equipment and bakery items so that they are separated from non-bakery items and protected from contamination. Place items frequently used inside the processing room. Organize the equipment layout inside the processing room so that they are not placed in random locations that obstruct work areas and walk path etc.

      • Observation (CORRECTED DURING INSPECTION): Noted dirty bake pans in the upstairs bakery kitchen.
      • --> This item was discussed during the previous inspection conducted in September 2018 that no dirty bake pans should be stored in the kitchen at the end of production.
      • Corrective Action(s): Put out dirty pans with covers on top in the hallway.

      • Observation: Severe fly infestation noted throughout the bakery kitchen. Noted excessive number of flies on wall, ceiling, dishwashing sink, shelves and food production equipment.
      • Corrective Action(s): Repeated problem. Remove flies from the bakery kitchen. Noted 2 fly traps (one at the entrance and another one on the shelve beside the dishwashing sink) with full of flies captured.
      • First, clean the entire kitchen including wall, ceiling, dishwashing sink, shelves and equipment thoroughly by washing and sanitizing. Catch all flies. Contact the pest control company to provide additional traps and discuss on how to reduce/control fly issue.
      • Note: Do not use the fly trap (one on the shelve beside the dishwashing sink) which allows flies to move in and out. A closure order was issued during the inspection.

      • Observation: Noted excessive dust accumulation on the ceiling and the wall (behind the oven). Dirts and grime on walls around the food production equipment. On going issue.
      • Corrective Action(s): Sanitation is a key to control pest issue in a food facility. Wash down dirts, grime and dust fully and sanitize.
      • Daily, weekly and monthly cleaning schedule must be in place. The current sanitation plan must be revised to enhance sanitation level of the bakery kitchen. Clean the bakery kitchen immediately. The Bakery Department lead and the food saferty lead must revise the sanitation plan and submit to the Health Department by September 17, 2018. A business card was left.

      • Observation (CORRECTED DURING INSPECTION): Noted the 2 dough mixers were not fully cleaned after each use. Inside of the bowls were cleaned but the exterior surfaces of the mixers were covered with egg wash.
      • Corrective Action(s): Clean the dough mixers thoroughly (in and out) after each use. If the mixer is not frequently in use, clean and cover the device.

      • Observation: 1. The celing panels around the ceiling exhaust fans had excessive accumulated dust.
      • 2. Walk in cooler and walk in freezer: food debris and ripped boxes noted underneath the shelves.
      • Corrective Action(s): 1. This is an ongoing issue. Priority.
      • Set a cleaning schedule for removing the ceiling panels and wash them. Recommended at least once a year as a start. Repeating of the same infractions will result in further enforment actions taken by the Health Department. Clean in 3 days.
      • 2. Sweep the floor immediately. Sweep the corners and hard to reach areas in the walk in units daily.
