- Observation: Observed the can opener having some debri build up. Additionally, observed some dust particles on clean utensils under storage. This may provide an opportunity for pathogenic bacteria to grow which may lead to foodborne illnesses.
- Corrective Action: Ensure that clean utensils are protected from contamination and that the can opener is regularly cleaned to prevent dirt build-up.

- Observation: Scoop handles for coffee ground in containers were stored in direct contact with coffee at time of inspection. Bulk ingredients may become contaminated from staff handling due to improper storage of scoops.
- Corrective Action: Ensure that scoops are stored in a sanitary manner that does not contribute to contamination of food.

- Observation: Observed one wiping cloth kept directly on the counter at time of inspection. Wiping cloths are to be kept immersed in sanitizer solution to limit growth of bacteria when not in use.
- Corrective Action: Ensure that wiping cloths are kept immersed in sanitizer solution.

- Observation: Some food debris observed to be built up on trays used for storage of food equipment. Can opener observed to have build up of dirt/debris. Plastic tarp/covering for tray shelf in walk-in cooler has some buildup of food debris and some mould growth.
- Corrective Action: Clean or replace the indicated items. Ensure that the premises is maintained in sanitary condition.

- Observation: Observed various utensils (whisks, spatulas, mixer attachment) worn down resulting in food contact surfaces that are difficult to effectively clean and sanitize. Stand mixer beat attachment appears to have paint chipping off of it.
- Corrective Action: Replace any utensils that are worn or damaged.

- Observation: Scoops for muffin mix and some other dry ingredients were kept immersed, with handles directly contacting the food. This presents a cross-contamination hazard as food handlers may directly touch these dry ingredients when handling the scoops.
- Corrective Action: Ensure that scoops are stored in a sanitary manner as to prevent direct contact with food with hands or gloves when in use by staff.
- 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
- Observation: Several plastic spatulas hung in central prep area are significantly worn down and need replacement. This makes effective cleaning of these utensils more difficult and fragments of plastic may enter food and present a physical contamination hazard.
- Corrective Action: Replace the spatulas.
- 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
- Observation: High temperature dish washer front panel is not sealed properly. When in operation, dish washer sprays water out of the front of the machine. Temperature gauges for dish washer are also not working properly. This may reduce the effectiveness of the rinse cycle and potentially attract pests due to excessive pooling of water around the immediate area.
- Corrective Action: Have dish washer serviced. Head chef has stated that repairs are scheduled for the following week.
- 315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
- Observation: Cooler beside ice machine had a broken thermometer.
- Corrective Action: Replace broken thermometer and continue tracking daily temperatures for fridge units.
