      • Observation: Sprout stored in the cooler measured at 15 degree C. Operator stated that sprout was stored from the day before. Ambiant air temperature in the cooler measured at 15 degree C. Operator stated that this unit temperator fluctuates and needs repair. Sprout discarded at the time of inspection. No other perishable food noted in the cooler.
      • Corrective Action(s): Do not store potentially hazardous food such as sprout in malfunctioning cooler. Repair and maintain the cooler so that food inside the unit can be kept at or below 4 degree C. Ensure the thermometer inside the unit functions properly. Monitor all temperatures and record twice daily.
