      • Observation (CORRECTED DURING INSPECTION): Display coolers are turned off. Sweets are displayed at room temperature and measured with a probe thermometer at 8.7C.

Coolers that are turned off at the end of the day must have the sweets moved into the walk-in cooler. Staff turned on the cooler, cooler temperatures was measured at 4C or below.

      • Observation (CORRECTED DURING INSPECTION): 1. Potentially hazardous food ladoos, barfi, gulab jamun, cham cham, and rasgulla which are milk-based and have high moisture content are stored at room temperature in display coolers that are switched off. Temperatures of the food were measured between 15C to 16C.
      • 2. Potentially hazardous food paneer and samosa filling was also stored at room temperature in the back kitchen.
      • Corrective Action(s): 1. Repeat violation. Staff turned on display coolers and stored potentially hazardous food/sweets in the cooler. Keep display coolers at the front of the store turned on and ensure potentially hazardous sweets are stored at 4C or below.
      • 2. Store potentially hazardous food in cooler at 4C or below. When filling samosa's, do not leave samosa filling at room temperature when not in use. Store in the cooler immediately.
