- Observation: (CORRECTED DURING INSPECTION) QUAT (Qauternery Ammonium Compound) sanitizer solution used for sanitizing food contact surfaces was measured below 200 ppm. (Public health significance)- For effective sanitation, Quat solutions applied to food contact surfaces must be maintained within the range of 200ppm -400 ppm. When sanitizer levels fall below this threshold, surfaces may not be properly disinfected, allowing harmful pathogens to persist. These pathogens could contaminate food items and, if consumed, may lead to foodborne illness.
- Corrective Action: Operator was able to prepare fresh batch of QUAT sanitizer solution at 200 ppm -400 ppm at the time of inspection.

- Observation: The hand washing station unit in the serving area did not have hot running water at the time of inspection. (Public Health Significance) Hand washing is an important practice to ensure food are protected from cross contamination from other previously handled foods or contact surfaces.
- Corrective Action: Ensure that there is hot running water available. Operator confirmed that an order for the repair has been sent in and the technician/pumber will be coming to fix the hot water issue on this station tonight. A follow up will be conducted to ensure hot running water is available.

- Observation: (CORRECTED DURING INSPECTION) Observed cartons of liquid whole egg past the best before date stored in the walk-in cooler. Public health significance - Best before dates indicate the potential shelf life of the food products. If food products not stored under appropriate conditions, there is a potential for the growth of spoilage organisms past the best before date.
- Corrective Action: Staff immediately moved the food products past the best before date. Operator to follow First in First out method while storing food items and discard the food products past the best before date.

- Observation: (CORRECTED DURING INSPECTION) Adequate sanitizer concentration not detected in sanitizer container close to the prep sink. Quats was measured at 50 ppm (Public Health Significance) Sanitizing solutions must be strong enough to destroy bacteria on surfaces to prevent the contamination of staff, clients or food on contact with the improperly cleaned surface.
- Corrective Action: Staff immediately refilled sanitizing solutions to maintain an effective concentration of 200 ppm Quats.
