    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Operators did not have a surface sanitizer solution ready. Operators obtained bottles of a quat sanitizer and a bleach sanitizer solution was made during the inspection. PHI tested the concentration of the sanitizer solutions, quat was measured at 200ppm and bleach solution was measured at 100ppm. PHI provided test strips to verify the minimum sanitizing concentrations.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Operators were unaware of how they would wash and sanitize utensils. Operators were instructed to dish wash equipment and utensils in the two-compartment sink: one compartment be used for washing and rinsing, then the second compartment for sanitizing using a bleach solution. PHI provided test strips to use for verify the minimum sanitizing concentrtation.
