      • Observation (CORRECTED DURING INSPECTION): Observed deep fried shrimp and deep fried chicken stored at room temperature. The temperature of the food was measured at 22-25C. Ensure that food is stored at 4C or below or 60C or above
      • Corrective Action(s): The operator moved the deep fried shriom and the deep fried chicken to the cooler. Discussed with the operator proper cooling procedures.

      • Observation: Observed the back door was blocked with clutter and boxes make it inaccessible and hard to access and check for pests activities. The bottom of the freezer containing meat was observed to be dirty and accumulated with brown filth.
      • Corrective Action(s): Please clean out the boxes at the back door and remove unnecessary clutter for easier accessibility and checking of pest activities. Clean the freezer containg meat. Dirt harbours bacteria which could contaminate food

      • Observation: Observed the tap faucets on both the three compartment sink and the prep sink to be broken and covered with a plastic bag temporarily. This plastic bag could harbour bacteria which could transfer to food and clean utensils. All equipment are required to be in good working condition.

      • Observation (CORRECTED DURING INSPECTION): Fried tempura and tofu, chopped vegetables (cucumbers), imitation crab, kept at room temperature. Surface temperature reads 14-15C.
      • Inspection started at 1:45pm, restaurant empty (indication of lunch rush is over). Staff kept stating that they keep food out only during lunch and dinner rush.
      • Corrective Action(s): All food returned to cooler. Do not keep food out when slow. Reminder to keep prep cooler lid closed when inserts aren't in use.
      • Food can only be kept out for 2hours before returning to cooler.

      • Observation: 1. Excessive grease accumulation throughout the cookline and ventilation hood.
      • 2. Dried up batter for tempura all along the shelving by the frier where tempura is made.

      • 4. Clutter observed throughout the kitchen making it hard to monitor pest activity. Back door not accessible without tripping or moving items.
      • Corrective Action(s): Please deep clean and sanitize the kitchen. Please reorangize the kitchen. Do not store items that are not buisness related here in this facility. If the items are not being used, remove it.

      • Corrective Action(s): Clean ceiling tiles above the kitchen are and pull out prep tables and equipment to clean food debris and filth underneath and sanitize. Remove all clutter and items stored directly on the floor underneath the prep table in the sushi area.

      • Observation: Cardboard boxes used as liner for cooking equipment and newspaper used on prep tables to soak oil, etc. by the frying station.
      • Corrective Action(s): Remove all cardboard boxes and use other liner for cooking equipment (i.e. foil and change on a regular basis). Do not use newspaper by the frying station. Use a more sanitary material to soak oil such as clean brown paper that is food grade, etc.

      • Observation (CORRECTED DURING INSPECTION): Kitchen staff was observed washing hands with gloves and using hand dip.
      • Corrective Action(s): Staff was wearing hand brace on right hand. Change gloves every time it gets contaminated and wash available hand between changing. Use of hand dips are not permitted, instead use the designated hand sink for washing hands.

      • Observation: Boxes of produce were stored directly on the floor inside the walk-in cooler. Food and food related items were found stored on the floor blocking the back door exit and also in the staff washroom (eventhough this washroom is not being used).
      • Corrective Action(s): Provide a palette in the walk-in cooler so that food items are not on the floor. Organize the kitchen area and storage area so that all items are stored properly. If possible, create more storage space in the back by installing more shelves in the back hallway but ensuring not to block the path to the back exit door.

      • Observation: A piece of the faucet at the 3 comp sink is broken. It was temporary replaced by a plastic film to control flow of water.
      • Corrective Action(s): Replace the broken piece so that the faucet works properly. Remove the plastic film since it is not sanitary.
