    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Facility has a two-compartment dishwashing sink that is too small to fit all the dishes and equipment within the facility. Facility operator advised that reusable dishes are being used in the facility.A three compartment sink with an additional hand washing sink is required if re-usable dishes are being used to serve foods in the facility. Sinks must be of adequate size to accommodate the largest dish, pan, pot or any other submergible piece of equipment.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • 1.Chlorine sanitizer test strips are not available. 2.Facility has a residential style dishwasher.1.Ensure that chlorine sanitizer test strips are obtained for testing dishwashing sanitizer concentrations and food contact surfaces sanitizer solution.2.A residential dishwasher cannot be used for washing dishes. Facility would need to obtain a commercial dishwasher to use for washing dishes or alternatively have a three compartment sink for dishwashing.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • Some large potted plants are located next to the refrigerator. Ensure that the plants are removed from the kitchen area to prevent accumulation of potentials insects and pests.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • 1.Cutlery trays in some drawers have buildup of food debris. 2.Ovens have buildup of food debris and grease. 3.Microwave is noted to have food spills and grime buildup.4.A few wooden planks and a wood cutting are being used as cutting boards which and are not easily cleanable.1-3.Ensure that the indicated items and areas are cleaned and sanitized.4.All cutting boards used in the kitchen must be food grade, smooth and easily cleanable.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • 1.The inside of some drawers are noted to have buildup of food grime and some utensil drawers are noted to be cluttered. 2.High touch areas and the outside areas of cabinets and drawers have buildup of food grime.1-2.Ensure that the indicated areas are cleaned and sanitized.
