      • Corrective Action(s): Thorough clean up of this kitchen is needed as discussed.

      • Observation: Most of the spray bottles for sanitizer (quats) measured well beyond the max testing (500+ ppm). Discussed with manager regarding dosing with pump system. One pump to a full bottle (1000 ml) produces 200 ppm solution. Staff not following instructions.
      • Corrective Action(s): Make sure bottles are labelled accordingly if used for different chemicals (i think they are).
      • Make sure staff are following procedures to keep spray bottles in 200 ppm range.
      • *Place sign at pump sink as reminder for staff.

      • Observation (CORRECTED DURING INSPECTION): Chlorine measured at 0 ppm when tested. Bucket of chlorine empty. Replaced. Retested at 50 ppm.
      • Corrective Action(s): Make sure staff audit the chemical volumes in all dishwashing units in premises every day. If a bucket is close to empty, get a replacement ready.

      • Observation (CORRECTED DURING INSPECTION): Quats sanitizer in spray bottle measured in excess of 500 + ppm solution. Too high. Bottle emptied and refilled. Showed staff the process and verification with test strips. Measured at 200 ppm. Squeeze bottle of concentrate available.
      • Corrective Action(s): Make sure staff find a consistent way to dose spray bottle in this area. 200 ppm is the ideal concentration for food contact surfaces.

      • Observation: Glasswasher sanitizer (chlorine) container full and serviced by technician. Tube line looks repaired. Tested rinse water and measured 0 ppm. Observed chlorine container "over" full and leaking at cap when unit turned on. Puddle of chlorine on floor. Transport lines inverted??
      • Corrective Action(s): Do not use this unit until it can properly feed 50 ppm chlorine into the rinse water. Have technician troubleshoot issues. Place sign on machine to only use bar glasswasher until repaired.
      • Send picture of repair work completed and the test out at 50 ppm at rinse water.

      • Observation: A) Glasswasher in bar area of bistro measured at 0 ppm chlorine. Unable to prime system. Manager stated glasses are washed at pub glasswasher, but unit full of glasses. Sanitizer feed line damaged at pump.
      • B) Dishwasher measured 0 ppm chlorine. Container of concentrate empty.
      • Corrective Action(s): Stop using units until repaired. Repair units such that they can obtain 50 ppm chlorine at rinse.
      • Follow up needed. Seep report for date.

      • Observation: Several chemical spray bottles available for use not properly labelled with either type, concenration/ratios or methods of use. Measured quats sanitizer spray bottle (unlabelled) at +2000 ppm, and not adequately labelled. Bleach spray bottle not labelled for intended uses. Quats concentrate bottle not labelled at all.
      • Corrective Action(s): Make sure staff are properly trained on appropriate uses for all chemicals in use. Make sure labelling system acquired for spray bottles. Recommend using a systematic dosing system for all sanitizers, and check with test strips on regular basis.

      • Observation (CORRECTED DURING INSPECTION): Glasswasher chlorine feed not working. Residual at 0 ppm. Jug empty at time. Replaced but no residual continues. Unit was able to obtain 50 ppm residual during inspection.
      • Corrective Action(s): Make sure that chlorine buckets are replaced when needed and that they provide proper sanitizing residual as discussed. Test daily.

      • Observation: Mouse droppings noted, primarily on floor around dish pit in kitchen area. Live traps and snap traps in abunance. Sticky traps noted inside live traps. PCO in weekly for premises and bi-weekly for building. Separate contracts.
      • Corrective Action(s): Continue to seek Pest Control advice on control measures. Suggest adding sticky traps to controls.
      • **Continue to plug holes and potential access points (plumbing and electrical conduits, base of metal flashing at floor/wall and plumbing). Any exposed and deteriorated wood should be plugged.
