- A few flies in deli area and on surfaces; not excessive.
- Prep areas with food debris.
- Some items such as popcorn, sausages in boxes stored on the floor and in corners around and the line cooler area.
- Corrective Action(s): Keep doors self closing during hot summer months when flies are most active.
- Install more light traps and other traps.
- Ensure all areas are free of food debris and residue including surfaces and underneath counters.

- Some items such as sausages (packaged), Popcorn (packaged), baking racks, and other items are stored on the floor.
- Clean dishes and dried goods for bakery are in milk crates that are difficult to clean on regular basis.
- Not enough racks are in place for clean dish storage above the dish washing area (3-comp sink).
- Corrective Action(s): 1. Install wire racks, drainage racks or other racks with durable, cleanble surfaces above the dishwashing area.
- 2. Install shelves, racks or other storage shelving to ensure all food and food containers can be stored on clean shelves above the floor.

- Observation: Dishwasher was not in use and broken for the last 4 months.
- Facility has plans to install 3 compartment sink to expand the 2 compartment sink.
- More racks are needed for dish drying and storage as items (unclear if dirty or clean) are being stored or stacked together.
- Facility using 2 compartment sink for washing, then sanitizing and then the wash sink is being used to store clean dishes. Rinsing and dumping in the sanitizing sink.
- Area for dishwashing is too small.
- Manager said the 3 comp sink has already been ordered and broken dishwasher will be removed, thank you.
- Corrective Action(s): Provide plans for 3-compartment sink install or fix dishwasher.
- Ensure that new sink ordered can fully submerge largest piece of equipment for sanitizing.
- Install more racks for dish drying.

- Observation (CORRECTED DURING INSPECTION): Sanitizer bottle in the deli was at 0ppm QUAT.
- This was being used to clean the deli slicers at the time of inspection.
- Dispenser at the wall was at 200ppm.
- Operator changed during the inspection, thank you.
- Corrective Action(s): Please ensure bottles of sanitizer are changed frequently. Water is not needed, fill directly from the wall dispenser. Test using strips occasionally to ensure sanitizer is at 200ppm Quat.

- Gage is reaching well above 182F during final rinse.
- Deli does have 2 comp sink for rinsing and sanitizing dishes. Quat sanitizer 200ppm.

- Observation (CORRECTED DURING INSPECTION): Spray bottle of quat sanitizer measured 0ppm residual. Quats was also tested at dispenser also measured 0ppm.
- Corrective Action(s): Bottle of sanitizer replaced and unit primed. Bottles were refilled and measured a 200ppm Quat residual. Resanitize all food contact surfaces and monitor concentration daily with test strips.
