      • Observation (CORRECTED DURING INSPECTION): Hand washing station in the back area was obstructed with knives, containers, and other items.
      • Corrective Action(s): Keep hand washing station clear so staff working in the back area can easily wash their hands.

    • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: Detergent and sanitizer station needs to be serviced. It does not appear to be able to draw detergent through the tubes. Some movement can be seen on the sanitizer side - dispensed solution measured 150 ppm Quat.
      • Corrective Action(s): Service the detergent and sanitizer station so it can dispense both agents properly. Sanitizer must measure 200 ppm. Obtain test strips from the supplier and ensure testing is done at least daily.

      • Observation: Fly activity observed.
      • Corrective Action(s): Contact pest control for recommendations other than fly traps. Continue to clean and sanitize surfaces. Minimize the amount of time food spends in unprotected areas. Keep doors closed as much as possible.

      • Observation: Hose for spray down large processing equipment and surfaces is not connected to detergent. Paper towel dispenser in the back is not working.
      • Corrective Action(s): Connect and supply hose with detergent so cleaning can be done more effectively. Repair paper towel dispenser.

      • Observation (CORRECTED DURING INSPECTION): Bleach and cleaning agents were stored next to food items at the back processing room.
