      • At time of inspection:1. A qualified pest control professional / company routinely monitors this facility for pests; however, records / documentation were not available for review.The owner / operator of this facility is requested to conduct the following, namely:1. Submit the most recent two (2) pest control inspection reports so that they can be reviewed. Ensure a copy of all pest control inspection reports are made available at this facility so that they can be easily reviewed during inspection.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • At time of inspection:1. The meat slicer (including some internal components) were found to be in an unsanitary condition. A plastic bag / garbage bag was placed over this piece of equipment which indicates that it is ready for service.The owner / operator of this facility is requested to conduct the following, namely:1. Clean and sanitize the meat slicer - including all internal components. DO NOT place a bag / garbage bag over this piece of equipment unless it has been indicated that it is fully ready for next service.****AT TIME OF INSPECTION, THIS ISSUE REMAINS EXISTING. DRIED FOOD PARTICLES (ALTHOUGH NOT AS SEVERE ON THIS OCCASION) WERE STILL PRESENT ON THE MEAT SLICER BLADE AND METAL PROTECTIVE COVER.

      • At time of inspection:1. There appears to be a bus pan (i.e. collection device) underneath the main kitchen commercial dishwasher. Water was noted within this collection device - indicating that the mechanical dishwasher is leaking and thus requires repairs / retrofit.The owner / operator of this facility is requested to conduct the following, namely:1. Make any necessary repairs to the mechanical dishwasher to ensure it is free of leaks.

The main kitchen line white cutting board (along with some other colored cutting boards) were severely scratched / stained and thus require replacement.The owner / operator of this facility is requested to conduct the following, namely:1. Replace all severely scratched / stained cutting boards. All cutting boards must contain a smooth, scratch-free surface.
