      • An insert of cooked taco beef that was intended to be put into the hot holding unit on the food truck at the southeast side of the tent had an internal temperature of 23 degrees Celsius.Ensure that hot food that will be placed into hot holding is fully reheated to at least 74 degrees Celsius before placing into hot holding.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The hand wash sink in the food truck (southeast side of the tent area) was obstructed by a cold pan (cold items in an ice bath). Food truck staff said they would bring a small table in the food truck to provide more table space.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Two deep fryer baskets were being stored in the hand sink by the outdoor deep frying area. Deep fryer baskets were removed from the sink and a table moved to the area to be used for storage/prep.
