      • Chlorine sanitizer concentration was measured at greater than 200 ppm. Staff diluted the solution to 100 ppm. Education on proper sanitizer preparation was provided. Ensure that the chlorine sanitizer solution is consistently prepared so that it measures 100 ppm, as required for effective and safe sanitizing.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Test strips used to verify the chlorine sanitizer concentration were found to be past their expiry date (2018). Obtain sanitizer specific chlorine test strips to ensure the sanitizer solution is being prepared at the correct concentration.

      • Temperatures of all the coolers/refrigerators/freezers/hot holdings were in compliance with Food Regulation. Frozen raw pork in its original packaging was observed at room temperature measured at 12C (surface temp). Staff mentioned that they were planning to prepare/cook it. Proper thawing methods were discussed with the staff. Corrections were made onsite.
