      • Observation: Build up of food debris/grease in the following areas:
      • 1. Large build up of burnt food debris on the rollers of the pizza oven.
      • 2. Build up of debris behind preparation tables along the edges where the wall meets the floor
      • Corrective Action(s): Clean and sanitize the following areas listed above. Increase the frequency of cleaning to ensure there are no build up of debris over time.

      • Observation (CORRECTED DURING INSPECTION): 1. When speaking with the operator on site about manual warewashing method, bleach was not used as a sanitizer when warewashing equipment (Pizza mixer, pizza cutter, pizza racks, utensils etc).
      • 2. Bleach sanitizer bottle tested to be <100ppm.
      • Corrective Action(s): Operator produced a new bottle of bleach tested at >100ppm. Educated the operator on the proper method of manual warewashing in a 3 compartment sink. Bleach is to be used to sanitize all utensils/equipment on site for operation.
      • Violation Score: 15
    • 315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
      • Observation: Prep cooler, walk in cooler and stand up cooler lacks thermometers inside the unit.
      • Corrective Action(s): Obtain thermometers and place them inside the unit to monitor the temperature for recording onto the daily temperature log sheets.

      • Corrective Action(s): Operator prepared new bleach solutions during the inspection - measured at 100ppm. Mix 5ml bleach to 1L water. Required concentration 100-200ppm.

      • Corrective Action(s): Repair/plumb in condensate drain line. Mop up excess water to prevent attracting pests.
