- Observation (CORRECTED DURING INSPECTION): 1. When speaking with the operator on site about manual warewashing method, bleach was not used as a sanitizer when warewashing equipment (Pizza mixer, pizza cutter, pizza racks, utensils etc).
- 2. Bleach sanitizer bottle tested to be <100ppm.
- Corrective Action(s): Operator produced a new bottle of bleach tested at >100ppm. Educated the operator on the proper method of manual warewashing in a 3 compartment sink. Bleach is to be used to sanitize all utensils/equipment on site for operation.
