- 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
- Disposable paper cup used as a scoop and stored buried in the product in the baking bulk ingredients. Discussed issue with chef and Suncor rep. Ensure cleanable scoops with handles are used for dispensing bulk product. Scoops should be stored separately from the products.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Butter packs were stored on the counter with no temperature control from 5am service start - temperature abused. Discussed issue with chef, and Suncor rep. Butters were discarded during the inspection.
- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- Paper towel was missing at the hand sink dispenser - chef installed new paper towel during the inspection.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- Raw wood pieces used under the dirty dish station for stabilization - refinish these pieces to be non-porous and easily cleanable.Wall behind the steam table was damaged - peeling/flaking finish - exposing raw wood underneath and creating a potential contamination source. Repair/refinish the wall to be smooth, and easily cleanable.Shelving in the walk-in cooler and freezer requires raising - ensure all shelving is at least 6 inches above the floor.Ice build up/leak noted at the kitchen dining room doorway. Repair the leak and prevent future water infiltration of this location.Ceiling vent cover and electrical conduit covers in the dish area were missing and/or detached and require repair/replacement.A section of baseboard was missing in the dry ingredients storage area.

- Multiple cooking utensils were damaged but still in use - metal pieces disconnected spider strainer, deep cracks in wooden spoons and rubber spatulas. Discussed issue with camp chef and Suncor rep.Ensure all utensils are evaluated regularly and replaced as needed.Milk dispenser cooler and microwave were visibly dirty inside and require cleaning.Oven mitts were visibly stained/damaged and require cleaning and/or replacement.
- 23. Is the facility maintained in a clean and sanitary condition?
- The following items/areas were visibly dirty and require cleaning:- dish area caulking and side wall- peanut butter bulk container
